8 oz. frozen mixed vegetables

1 tsp. dried oregano

1 tsp. chopped fresh thyme

1 package (31/2 ounces)ramen noodles

1 chopped small onion

3 low-sodium bouillon cubes

1 tsp. grated fresh ginger

2 minced cloves garlic

Bring the water to a boil in a large saucepan over high heat. Add the mixed vegetables, oregano, and thyme and return to a boil. Add the noodles (discard the seasoning packet) and cook for 4 minutes. Add the onion, bouillon cubes, ginger, garlic, and lemon juice and cook for 4 minutes, or until cooked through. Remove from the heat.
